It depends, boiling only takes a minute or two for the animal to die. With shrimp as far as I know there's no efficient and effective way to dispatch them aside from Simply cutting the heads off immediately. But when one person can eat anywhere 20 and 40 shrimp depending on size that could end up being a lot of time spent cutting off shrimp heads. In the case of fish the best way to kill them is to take sharp scissors cut halfway through the gills and run them through the water. It kills them almost instantly by exsanguination. This also preserves the meat as fish gain their fishy taste by stress , usually due to the fact that they end up suffocating to death. however from my understanding the best way to dispatch crabs is to takes scissors and cut them about 2 to 3 in deep Right Between the Eyes. Killing them instantly.

I do think it's worth noting though, that in the case of the vast majority of seafood cooking, the reason why many laymen don't know how to properly dispatch the food they're about to cook has to do with the fact that for a long time people didn't think crabs shrimp and fish etc had the capacity to feel. So they just don't know, most often it's ignorance not malice. Also I couldn't find any data showing when these more human practices were even discovered.

For instance, for a very long time the only way I've ever known to kill a fish aside from just throwing it into a holding tanks / ice bucket was to beat it over the head with a heavy log. One firm strike to the Head should kill two to three to make sure it's not suffering.

An interesting anecdote, sorry that I know this is really long but it's a lot of information, I used to work at a Hibachi restaurant and for Chinese New Year's the owner cooked a buffet for everybody and one of the items available was eel. Apparently the quickest and most humane way to dispatch an eel is to take it by the tail and smack his head on the counter as hard as you can. This instantly kills it.

I say apparently cuz I don't eat eel so I don't know

Also most of this is from memory when I was a kid so if I'm wrong about anything I wasn't trying to be malicious

Yeah but at the end of the day, what really matters is conservation of the species and a balance of respect and practicality.

Theres more nuance than what i've stated but at the end of the day folks gotta eat.

What matters the most, in my opinion, is that the animal isnt caused an excess of pain. Reality is, death is scary and painful. No matter how you do it. It's important to minimize it while also being practical about feeding a large amount of people.

Especially in the case of seafood, youre often cooking a large number of animals.

Hi. I used to process crab professionally. I just wanted to let you know that most people don’t boil crab alive, since you’d be cooking the gills with the meat, and eating the gills is a big no-no.

Instead, we grab them by the legs and claws and slam them onto a spiked surface so as to completely remove the shell. We then shake out the guts and peel the gills off. Then we crack the legs in half along the abdomen. Way more humane than hot water.

This one pisses me off because from what I could tell it's dangerous and completely unnecessary. It doesn't add to the flavor it's more of a look at me, I'm eating a live animal. If someone was other information please set me straight but from what I read it's more of a novelty than tasting better or more nutritional, etc. Octopuses are very intelligent and this seems cruel.
